Pita chickpea veggie wrap

This was our dinner last Thursday and was so simple, I had to share.  Just a few minutes of prep time to put together. 

-Drain and rinse a can of chickpeas.  Mix with 1 tsp olive oil and 1/2 tsp chili powder.  Roast in 350 degree oven for about 10 minutes.

-To assemble: spread hummus on pita bread, add chickpeas and any vegetable you have available-here we used cucumber, tomato, parsley an arugala.

Time saving tips: This really is the type of meal that you can whip up in a snap and I suggest remembering this for when you are strapped for time.
