Vegan Goulash
This is such an easy one and uses mostly pantry staples. Of course I made a couple of adjustments based on our preference but is was inspired by myplantbasedfamily.com.
Ingredients
1/2 onion, diced
2 cloves garlic, minced
1 bell pepper diced
1/2 cup green lentils
5 cups vegetable broth
1/2 tsp paprika
1/2 tsp smoked paprika
salt to taste
1 , 15 ounce can diced tomatoes
1, 15 ounce can tomato sauce
1, 15 ounce can kidney beans
1/2 cup barley
Instructions
1) Bring 2 cups veg broth to simmer. Add lentils, onions, garlic, bell pepper and spices.
2) After 10-15 minutes, add remaining ingredients. Simmer until barley is tender. ENJOY!
