Lentil Sloppy Joes

Here's the recipe I made yesterday while cooking LIVE...lentil sloppy joes.

It was an incredible hit with the kids and has earned a place in our regular meal rotation.

The lentils would be great in a lettuce wrap, in a taco or over a baked potato. So leftovers can definitely be repurposed!

Do you have a recent meal discovery that everyone in the family loves?

Ingredients

1 cup cooked lentils or one can lentils

1 onion dices

2 cloves garlic minced

1 green pepper, diced

2 T chili powder

2 tsp paprika

1, 15 ounce can tomato sauce

2 T tomato paste

1 T mustard

1 tsp maple syrup

  1. Sautee onions, garlic and green pepper. Add spices.

  2. Once soft, add all ingredients except lentils. Mix until combined.

  3. Add lentils to warm.

  4. Serve on toasted whole grain bun.
