Roasted Veggies and Chickpeas Over Whole Grain

I love a meal that takes 10 minutes of hands-on prep time. BONUS: you can use any veggies, even frozen.

Roast the vegetables and drained chickpeas with olive oil, salt, pepper. Once tender add to your favorite whole grain. Easy as that!
