Quinoa and sweet potato fritters
Simple 5 ingredient meal...sweet potato and quinoa patty over baby spinach with roasted chickpeas.
1 cup/1 medium mashed sweet potato
1 1/2 cup cooked quinoa
1/2 cup chopped baby spinach
1 tsp onion powder
1/2 tsp salt
1/3 tsp black pepper
Combine all ingredients and form into patties. Place on parchment lined baking sheet. Bake in 375 degree oven and cook approximately 10 minutes on each side. Enjoy.
